Market Kitchen Bogota
Located at W Bogota, where the Legend of El Dorado comes alive, Market Kitchen is inspired by Jean-Georges Vongerichten’s concept of the “hotel as home” and extends to the restaurant as a casual family kitchen.
This modern farm-to-table concept evokes alluringly familiar local cuisine and reinvents classic dishes with eclectic flair producing unexpected flavor combinations to remarkable effect.
Inspired by the casual, simple elegance of the setting, the menu features Jean-Georges Vongerichten’s classic “greatest hits” with fresh, locally produced ingredients. Emphasizing comfort and creativity, allowing guests to try new flavor combinations and explore spices from other regions, all while remaining close to home.

Chef Daniel Silva
Daniel Silva was born in Mexico City, where he studied gastronomy at the renowned Centro Culinario Ambrosia.
He discovered his passion for gastronomy during his first experience, as a baker, at the NH Hotel in Cancún. After a couple years in Cancún, Daniel returned to Mexico City to test his skills in other areas of gastronomy, working as a Operations Facilitator at the Mexican Restaurants Corporation.
Later, Daniel continued his culinary career in the kitchen at the J&G Grill restaurant at the St. Regis Hotel in Mexico, from renowned chef with three Michelin stars, Jean George Vongerichten. Here, Daniel had the privilege to work alongside and learn from the famous Venezuelan chef, Olivier Debois. Another well-known Venezuelan chef, Maycoll Calderon also served as Executive Chef at J&G Grill.
Daniel recalls that during his four years at J&G Grill, Olivier became his best mentor. By his side he learned about leadership in the kitchen and the importance of working as a team to meet the business objectives. Also, Olivier showed Daniel how to become an artist in the kitchen, creating unthinkable dishes full of flavor, texture and presentation.
This year Daniel joined the team at Market Kitchen at W Bogota hotel as Executive Chef. Here he hopes to continue to develop his passion of food, creating Farm-to-Table dishes inspired by the unique and flavorful ingredients only found in Colombia.
